Zucchini Slice

Hello Faithful Readers

So i have had a few requests for this after putting my batch up photos on Facebook, so here it is hope you all enjoy!

This makes for a GREAT Freeze option for quick and easy meals when you need and can't be bothered cooking :-)




I need a WAY Bigger Bench top i am such a MESSY Cook hahahaha
Anyway

Ingredients

5 Eggs
150g (1 cup) Self Raising Flour, sifted
500g any vegetables grated (I used Zucchini of course hence the name hahaha, Pumpkin, Carrot and sweet potato)
I Large Onion Grated
1 cup grated cheddar cheese
60ml (1/4 cup) vegetable oil

Method

Step 1

Preheat oven to 170 Deg C
Grease and line a 30x20cm lammington pan

Step 2

Beat the eggs in a large bowl until combined.
Add the flour and beat until smooth, then add the vegetables, onion, cheese and oil and stir to combine.
Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.

It is Yummy so enjoy

Paleo Chocolate Recipe







Hello Faithful readers

I loved making this chocolate, it was so easy, SO YUMMY and so PRETTY!

So many flavour opportunities here, i made the basic recipe into a maple pecan and my body thanked me! :-)

Ingredients

3 Tablespoons Organic coconut oil
3 Tablespoons Almond Butter
4 Tablespoons Cacao powder
1 Tsp Vanilla extract
1-2 Tablespoons Unprocessed Honey 
(This depends on your taste and how sweet you would like it)
Then add whatever you would like to change it up, e.g. a pecan and a tsp of maple syrup...

So super easy just put all the ingredients together and mix them up in a heat resistant bowl on top or a pot with some water in it that is boiling (a double boiler) :-)

Then once they are all melted and mixed together you can add your creative mix ups and pop it into whatever form you would like it to dry in, e.g flat sheet to crack into shards, little paper patty pans like i did, etc etc

Then pop into freezer and enjoy within 30 minutes, leave in freezer and EAT away

Paleo Blueberry Cheesecake

So i was really intrigued when i saw this paleo cheesecake, i was so interested to see what a cheesecake that has absolutely no cheese in it would taste like...
 And it was full of blueberries and that i LOVED!! 
I would almost be tempted to put the blueberries in whole next time and not blitz them at all, i think you might taste them more that way and i would LOVE to taste them more.
I personally really enjoyed this cheesecake although Greg on the other hand thought it was too coconutty (Greg is still not totally converted to giving up sugary stuff so that could play a part)
 but i LOVED it.

Anyhoo here is the recipe all thanks to

stuff you need…

for the base:
1 1/2 cups walnuts
1/3 cup raw cacao powder
3/4 cup unsweetened desiccated coconut
100 grams pitted dates (soaked in boiling water for at least 10 minutes + drained)
1 tbs. melted coconut oil
1 tsp. vanilla extract
for the filling:
2 cups raw cashews (soaked in water for at least one hour + drained)
400 mls coconut milk
1/2 cup melted coconut oil
1 tbs. vanilla extract
3 tbs. Natvia
2 cups fresh or frozen (thawed) blueberries

now what…

 Line the base of a 24 cm spring form cake tin with baking paper.
Start with the base. In a food processor (we use our Vitamix), place the walnuts, raw cacao powder and desiccated coconut.
Whiz these ingredients until a fine meal forms.
Transfer the meal into a large mixing bowl, leave this for now.
Drain the soaked dates and place them into the food processor, along with the coconut oil and vanilla extract.
Whiz these ingredients until a smooth paste forms.
Transfer the paste into the mixing bowl with the meal and mix together (you may need to get your hands dirty for this job!).
Once it’s all combined, press the base into the cake tin, making sure you press it out evenly, covering the entire base.
Place this into the freezer.
Now for the filling (you will need to rinse the food processor).
Drain the cashews and place them into the food processor.
Whiz these until a crumbly, buttery paste forms.
Now add the coconut milk, vanilla extract, Natvia, melted coconut oil and blueberries.
Whiz on high speed until completely smooth.
Take out the base from the freezer and pour the filling on top of the base (shake the tin carefully to even out the top).
Place the cake into the freezer for two hours or until set.
Take the cake out of the freezer and let sit for 30 minutes.
Rub the outside of the cake tin with a hot cloth and release the spring form slowly (you may need to run a knife around the edge).
Cut into slices with a hot knife! We enjoyed ours with pureed blueberries!
Store the remainder of your delish paleo blueberry cheesecake covered in the fridge for a week. It can also be stored in the freezer and thawed out when it’s time for cake (when isn’t it time for cake?!).
Give it a go people you won't regret it and your body will thank you!

The Best Banana Bread Recipe EVER!


Honestly i had THE blackest and like the worst rotten bananas i have ever had hey, i really was just about to throw them in the bin because i kept meaning to make banana bread with them, then i thought ah no they are just too rotten now and was about to throw them in the bin and thought, no no no i have to make the banana bread, so they were kept for another two days because i didn't find time to make the banana bread EEEK
Gotta love google though cause i googled best recipes for really rotten bananas and i found this BEAUTY, it is for a chocolate banana bread and it is SUPER YUMM!
So if you get really rotten bananas then this is the recipe for you :-)

Chocolate Banana Bread Recipe
4 overripe medium, bananas
1/3 cup unsalted butter, melted
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 cup all purpose flour
1/2 cup whole wheat pastry flour
1 cup semi-sweet chocolate, chopped
Preheat your oven to 350 degrees Fahrenheit.
If your overripe are frozen rinse under warm water to defrost or let defrost on counter until soft enough to mash.
In a large bowl, mash bananas. Add melted butter and stir with a wooden spoon until incorporated.
Add sugar, egg, vanilla, baking soda and salt. Stir until incorporated.
Add all purpose and whole wheat flours and stir until incorporated.
Chop semi-sweet chocolate into different sized chunks and mix.
Pour mixture into 9x5 loaf pan.
Bake for 40-50 minutes, until a toothpick comes out clean.
Cool on a cooling rack and eat warm or at room temperature.

Taking time out for joy

Hubby is out tonight on a manly bbq and i have time totally to myself :-)

Kids are in bed, one asleep one still chatting away to himself, and I'm taking time out for joy, "nice sigh of relief"

So i have toy story 3 playing in the background while i surf through blogs that i love, there is so much great stuff out there, I'm also eating cadbury favourites and whipped up a chocolate banana bread which is currently baking and going to be enjoyed with a tall glass of icy milk once it has come out and cooled a little.

Yum, i love the weekends where i get to just simply take time out for these little joys of life.
























I must admit i do feel selfish in a way, crazy hey... I feel like i should be doing some housework or spending time with God or something "productive", but at the same time i really just want to do these little things that bring me joy when i get alone times like these with no expectations from anyone.

Any other mamas out there feel guilty to enjoy their free time however they want to when the rare moment occurs that we get it?

Long overdue...

Dear faithful readers 
I'm so sorry that I have been so absent lately, life seems to have all of a sudden exploded into busyville and the other issue is that I'm doing this whole blog thing from my teeny tiny I phone with no keyboard, and it's just really hard on my thumb and DEFINATELY ruining my eyes so between all of that it's proven slightly difficult to get any posts done :(

To tell you the truth I was so tempted to let it slip another day but I knew deep down that just wouldn't be fair and my conscience took over my tired eyes and tired mind so if this post is grammatically incorrect or just plain boring please forgive me :) 

So what's been going on for me you ask, well I'm two weeks into my intense healthy life challenge and just totally loving it!! It has also been my birthday recently so weeklong celebrations went on, I have got to show you the cake I made for me, it was OVER THE TOP!! Here it is what do you think?? ;) 
I also started a cake decorating course at TAFE one night a week so yes my plate is rather full right now with my 2 year old and my 6 month old demanding lots of attention for 99.9 percent of my day ;)


Death by chocolate perhaps?? I tell you this weight loss journey is all about one day and one food decision at a time and some of my days are better than others when it comes to food choice and birthday week has simply been diabolical for me but I am still exercising and that's the life saver, I encourage you get out there and exercise, more so find someone to be accountable to when it comes to exercise and just fully commit to it, like NIKE says JUST DO IT!!

So this is me two weeks into the challenge and I do think I see some improvement already, I still have a long way to go because my clothes are still a tight 14 and I want to get to a 10 but I am what I eat and that's a serious work in progress!!





Off the topic I need to get another device to dedicate to blogging cause this I phone thing is just doing my eyes in so here's the question I'm tossing up between the new I pad air or the new 13" mac book pro with haswell processor what do you reckon I should go for??? HELP really HELP please!! :)

Indulge much??!!



So yesterday was my dad's birthday and I made my first Ombré cake, Tre Chic ha ha ha ha
Granted my icing technique could be tidier, but that's why I love occasions to try new cakes because practice sure does makes perfect. Doesn't it look wonderful in all it's 4 layer Glory. Dense buttery vanilla sponge, separated by sumptious strawberry preserve and rich caramelly Dolche Leche and then covered in a smoothe, creamy, mouth watering cream cheese frosting...

Who wants some??

I worked so hard, and was so meticulous when putting the candles on my dad's cake to make sure I had it all spelt right, alas I failed to notice that I totally mucked it up HAPPY birthdaH indeed ;) 

The night went well, with the odd thorn in my side, but that's a realm not worth exploring as yet...

So no exercise yesterday, but lots of joy around good food and times with family so I'm happy.

So easy to say we are Christian but to live it, to actually really live the life that we are called to live is an entire lifetime of hard yakka...

Yesterday's shenanigans...



So does that look like a happy Mama or what??!! Yes indeed I'm out with two amazing girlfriends, great chats, great food and great inspiration :)
Now I did say that I'd try to do some exercise but alas it was grand final day here in Australia so we were invited over to my mom in laws to watch the game and have lunch, I'm not into the game but I do like to nibble as you all know so it made for a lovely morning into the afternoon :) Immediately after that we went to visit my mom because she is recovering from an operation and straight after that we zoomed home to get the kiddies in bed before I had to absolutely speed to get ready to meet the girlies because time had gotten away with me... 
So I really had little to no time to exercise :( or is that just an excuse??

My well looked forward to night out was VERY VERY VERY GOOD as you can see by the spread above! It was absolutely delicious and these are but a few of the tasty morsels we tried.
We went to a tapas style place called The Cavern in Kalamunda which was cozy and had great service ill definitely be dragging hubby there soon!
We indulged in a yummy variety of truffle chips, gnocchi with slow braised lamb, prawn rice balls, yummy greens, a beautiful crumbed Bree pear and walnut salad and ofcource the best part of all the highlight of the night was my fudge pecan brownie with salted caramel sauce and ice cream, it was so good for the soul!!

It's the weekend so I'm not gonna be too hard on myself and will keep fighting toward fitness tomorrow :)
